What is fall without a little pumpkin and the spices that go along with it! These pancakes have it all with a few other nutritional nuggets. The perfect way to start your day.
Ingredients
2 cups oat flour
1/2 cup Buckwheat flour
1/3 cup ground walnuts
2 tbsp. baking powder
1 tbsp sugar
dash salt
2 tsp. cinnamon
1/2 tsp. nutmeg, allspice and ginger
2 beaten eggs
2 tbsp greek yogurt
2/3 cup pumpkin puree
1 1/2 cups almond milk
Directions
In a large bowl combine dry ingredients, mix with fork or whisk
Combine eggs through almond milk
Add to dry ingredients, stirring till moistened.
Let sit a few minutes, add more milk if needed
Cook on hot griddle, makes ~20 pancakes
Top with yogurt and fruit, maybe some almond butter or have a bit of heated pure maple syrup to dip your cakes in.
