PUMPKIN PANCAKES

What is fall without a little pumpkin and the spices that go along with it! These pancakes have it all with a few other nutritional nuggets. The perfect way to start your day.

Ingredients

  • 2 cups oat flour

  • 1/2 cup Buckwheat flour

  • 1/3 cup ground walnuts

  • 2 tbsp. baking powder

  • 1 tbsp sugar

  • dash salt

  • 2 tsp. cinnamon

  • 1/2 tsp. nutmeg, allspice and ginger

  • 2 beaten eggs

  • 2 tbsp greek yogurt

  • 2/3 cup pumpkin puree

  • 1 1/2 cups almond milk

Directions

  1. In a large bowl combine dry ingredients, mix with fork or whisk

  2. Combine eggs through almond milk

  3. Add to dry ingredients, stirring till moistened.

  4. Let sit a few minutes, add more milk if needed

  5. Cook on hot griddle, makes ~20 pancakes

  6. Top with yogurt and fruit, maybe some almond butter or have a bit of heated pure maple syrup to dip your cakes in.
