CHICKEN TORTILLA SOUP



Have a healthy and delicious meal ready when you are without spending extra time in the kitchen at the end of your busy day. Toss the ingredients into the crock-pot and have a hot meal you'll feel good about serving to yourself and your family!


This can also be prepared the night before, take out of refrigerator in the morning turn on slow cooker and let it do the work for you!



INGREDIENTS:

  • 1/2 large onion, chopped

  • 4 cloves garlic, minced

  • 1 tbsp. olive oil

  • 3 chicken breasts, cut into chunks

  • 1 12 oz. pkg. frozen corn

  • 2 (15oz) cans black beans, drained and rinsed

  • 1 (7oz) can chopped green chilis

  • 8 cups low sodium chicken broth (organic optional)

  • 2 cans diced tomatoes

  • 2 tbsp. cumin

  • 2 tsp. oregano

  • 1 tbsp. chili powder

  • 1 tsp. paprika

  • dash cayenne

  • 1 cup chopped cilantro

Sauté onion and garlic in olive oil until tender then add with rest of ingredients to crock-pot. Cook on high 5-6 hours or low 6-8 hours.


Options for garnish: jack cheese, cilantro, sour cream or Greek yogurt, tortilla chips


This soup also freezes well. Cook once eat twice!
