Yes, these little gems are broccoli bites, and they are delicious. Even the picky eaters in the family will be asking for more!
INGREDIENTS:
1 lb broccoli
1 lightly beaten egg
1/2 cup grated cheddar cheese( I used daiya it's dairy free)
1/2 cup plus 1 tbsp panko breadcrumbs( I used GF)
1/2 cup diced sweet onion
3 cloves minced garlic
fresh ground pepper to taste
1 tsp olive oil
Preheat oven to 400, and line a baking sheet with parchment paper and spread the olive oil to coat.
Fill a pan with water, add broccoli and bring water to a full boil, blanche for 3 minutes. Immediately transfer broccoli to strainer and rinse with cold water.
Drain and finely chop broccoli.
In large mixing bowl add cheese, onion, garlic, pepper, bread crumbs and egg with broccoli and mix well to thoroughly combine ingredients.
Take a sheet of wax paper and place 1.5 cups of mixture in center and fold wax paper in half to mold mixture into a 1 inch log.
Cut into 1" pieces, pressing together into bites, place on prepared baking sheet.
Bake for 12 minutes(or until golden) turn bites over and bake for additional 12 minutes. Add more time as needed.
Remove from oven, let cool and ENJOY with Sriracha ketchup, garlic aioli or your favorite condiment!
